Deviled Eggs (Serves 4)
- Hard boil 6 eggs.
- Thoroughly cool, then peel eggs.
- Cut each egg in half. Put the yolks into a small mixing bowl.
- Thoroughly mash the yolks with a fork until there are no lumps.
- Add to yolks: 2 tsp. mayonnaise, 1 Tbs. Matheny’s Mustard with Horseredish, and salt and pepper to taste. Mix thoroughly.
- Spoon a dollop of yolk mixture into each egg white. Sprinkle with paprika or finely minced parsley or cayenne for a kick!
- Chill before serving.
